Spinach
Salad
1
gallon salad greens (1/2 spinach and ½ romaine or other
mix)
2
c sliced fresh mushrooms2 c grated swiss or chedder cheese
½ c sliced or slivered almonds
4-6 strips bacon, cooked and crumbled
Craisins or Mandarin oranges
Poppy Seed Dressing
½
c white vinegar¼ c sugar
1 T grated onion
1 T Dijon mustard
½ t salt
1 c vegetable oil
1 t poppy seeds
Blend all ingredients except oil and poppy seeds. With the blender on, gradually stream in the
oil until thoroughly combined. Add the
poppy seeds and just pulse until combined.
Serve sparingly over the spinach salad
